Fresa's Chicken Al Carbon: Order the Whole Chicken and Call It a Night

There's a move I always tell guests staying at our South Austin properties: if you want a real meal without going far, call Fresa's and order a whole chicken for the house.
That's not a joke. Fresa's Chicken Al Carbon does wood-fired whole chickens to go, and it is one of the better decisions you can make if your group is tired after a long day and wants something excellent without anyone having to cook. But if you're going in person — and you should — sit on the patio on South 1st and let the evening come to you.
What Fresa's Does
Fresa's opened in 2012 with a simple premise: wood-fired Mexican chicken done right. The al carbon preparation means everything goes over an open fire, and the result is chicken with actual flavor — crispy skin, smoky, tender through. They've kept the menu focused over the years, which is a good sign. Places that keep the menu tight usually do it because they're confident in what they have, not because they ran out of ideas.
What to Order
Half chicken al carbon. Esquites on the side. Sit outside if the weather cooperates — and in Austin, especially in spring and fall, it usually does. The esquites are corn done in the Mexican street style with cotija, chile, and lime, and they are not an afterthought. Order them.
If you can't decide between sitting in and taking out, the whole chicken to-go is genuinely one of the better group meal decisions available in South Austin. It travels well, it feeds people properly, and it's the kind of thing guests remember.
